Wagamama’s Uxbridge

This busy high street eatery has a vast kitchen extract system, both in terms of dimension and size. Overall length is approx. 50m+ with dimensions approx. 600mm x 1000mm. Manual cleaning for this system would require additional labour and visits, however, Ecofix has reduced the visits to one night from two. Labour has also been reduced in terms of man hours required. Current cleaning frequency is set at 100 days for 1 night with 3-man team. All photos below were taken Pre–cleaning and represent areas where Ecofix has been installed.

Canopies

Both canopies were found in a non-cleanable sate this visit with micron levels of less than 50 ⴗ. Each canopy is fitted with the Quintex spray bar using white nozzles. Only detergent is dosed here with low concentration. This stops the build-up of grease and gives a full clean finish.

Pre-clean GTL measured @ <100ⴗ. Again, these areas do not require cleaning this visit, however, it is likely that levels will increase by next visit but may still be below TR19 Guidance. In this situation Quintex will clean the area next PPM as part of the system management. The procedure shows that the areas fitted with Ecofix will not reach a non- compliant state.

Ductwork 3 metres from canopy to Midway

With Pre clean GTL of 100ⴗ cleaning was not required this visit. Cleaning would be left to the next visit as part of system management. This allows us to clean other areas of this vast KES as part of the system management.

The midway section was also in a non-cleanable state this visit (100ⴗ). The photo shows little build-up of contamination and does highlight another important aspect for Ecofix function. Depending on how dosing is programmed, contamination will not cover all faces of the ductwork. This allows for a smaller contamination footprint which aids cleaning and reduces labour requirement.

Ductwork Upstream of fan

The GTL here was measured to 125ⴗ due to pooling where the ductwork changes direction (air flow resistance). Cleaning was carried out to remove this. This ensures that the ductwork will be fully compliant to the next PPM.

Ecofix is installed in the canopies and ductwork up to the upstream section. The other allocated area for install was the external discharge riser (Vertical Section).

Vertical discharge riser

The vertical discharge riser has a Quintex centraliser installed throughout. Manual cleaning is carried out at the base of the riser where resistance is evident. The riser is accessible for manual cleaning at intervals but will require a platform/ MEWP to facilitate. The riser has had Ecofix installed since March 2017; no manual cleaning has been carried out to the riser within this time. Independent auditing (by client and on the behalf of the site landlord) of the site has monitored contamination throughout this period to support compliance. Ecofix has continued limit build-up of contamination using Bio and detergents. After six and a half years the riser is still passed as compliant, however servicing will be required to the internal centraliser to ensure efficacy. In this case, Ecofix development dictates upgrades to the system with full riser inspection and cleaning to be carried out.

Summary

Wagamama’s Uxbridge has benefitted greatly from Ecofix grease management. Being such a large system, Ecofix acts as an aid to cleaning allowing for reduced servicing costs and labour time whilst remaining compliant. Quintex’s service package works with Ecofix grease management to achieve this compliance.
